‘00’ flour has an extra fine grain, resulting in airy, light bread and soft and delicate pasta. Is a natural flour, containing no additives, preservatives or colouring. Makes tough pasta dough that holds its shape during cooking and will not disintegrate into a starchy paste. Excellent for long, slow fermentation, as Neapolitan traditional pizza. Excellent for products with a long rising time, such as brioches, panettone and other baked goods. Used by bakers and chefs. Suitable for making pasta, gnocchi, tempura, desserts, sauces, bread, pizza, brioche and crepes.
